Pea and Broadbean Pate Recipe

It’s officially summer when you are able to harvest your own peas from the veggie patch. My in-laws have been growing some lovely broadbeans so I’ve got access to home-grown Peas and Broadbeans, so looking for a good recipe was necessary. I found this one in Jamie Oliver’s Italy book, but I have adapted it to suit our taste.

Ingredients –

  • 3 handfuls of peas
  • 2 handfuls of broadbeans
  • half a juicy lemon
  • 1 handful of fresh mint
  • pinch of real seasalt
  • quarter clove of raw garlic
  • half a red chilli (optional)
  • 2 tablespoons of extra virgin olive oil (optional)

Process –

Pour hot boiling water on the broadbeans in a bowl and leave it for about 3-4 minutes.

Strain the beans and then wizz all of the above ingredients together in a food processor or  blender until they look a bit like mushy peas.

It’s ready! Spread this on a sourdough toast/buckwheat crackers or rye crackers to enjoy the tasty snack. Yummy!

The recipe does about 4 pieces of toast/crackers.
