Holy Guacamole!

I am a big fan of avocados and guacamole is a great way to eat them, combining some other raw ingredients into a paste of pure deliciousness.

There are not many foods that I make that are completely raw, but this is on of them.  Now I just need to find something raw to eat it with!

  • Avocado 1
  • Tomato 1 chopped in 1cm chunks
  • Unrefined salt A pinch
  • Lemon juice As much as you like – lime juice is also fine
  • Red onion About a quarter, finely chopped.  This is optional.

Peel the avocado, remove the stone.

If you avocado is ripe then it should be soft enough that you can mash it with a fork.  If not, then you might need to give it a bit of encouragement.  My favourite way is to slice the unripe avocado and run it through the slow juicer on puree mode, but sticking it in a normal blender would also work.

Now that your avocado is soft, put it in a bowl together with your chopped tomatoes, onion (if using), salt and lemon/lime juice.  Now just mash it all together to get all those juices flowing and flavours blending.

You just made guacamole!
