Ever since I first tried it years ago I have been a huge fan of pesto. It’s the perfect accompaniment to so many things, and of course is also a great pasta sauce in its own right. I used to like the store bought pesto in jars, but a few years ago Vinu started making her own and now the ready made stuff just doesn’t cut it in comparison.
It is tempting to buy pesto in a jar just for the convenience, but the thing that amazes me is just how easy it is to make you own. So here’s how.

Lightly toast the pine nuts for a minute in a dry pan
Finely chop the garlic and lightly fry it in a tiny bit of oil until a little softened (but don’t let it go brown).
Now chuck all the ingredients into a jug and blend together into a paste. You can make it as rough or as fine as you like.
That’s it! You just made delicious basil pesto. It really is delicious just with these simple ingredients and doesn’t need any cheese, but if you want to add some hard cheese like parmesan then grate it finely and then blend it into the mixture to your own taste. You might also need to add some extra oil to balance out the dryness of the cheese
